We're using a variety of fermentation methods, meant to extract or showcase the essence of each varietal, block and vineyard. Stainless steel for freshness and purity of aromatics, concrete for tannin integration and depth, barrel fermentation for maximum integration of wood and fruit giving the most luxurious and opulent combination of fruit and structure. Each wine has a unique combination of all three or sometimes only one. Regardless of the method chosen, each wine is meant to exude the elegance and precision we look for in each of our wines.
Process

For the vast majority of wines and certainly ours, barrels are something that impact the wine the most. Due not only to the sheer exposure time, but how influential the toasting, wood origin and seasoning of where the wood was held can be. Choosing barrels for your wines could be compared to choosing the clothes you wear. Showing specific goals and desires to anyone you come across. A three-piece suit or sweatpants and a dingy hoodie, convey vastly different intentions. No different, the choice of what type or size of barrel, where you want the wood to come from and how you want that wood seasoned and toasted are all variables that when controled, convey a different message to the discernable taster. We chose to design our own barrels, working with a cooperage for ten years to identify where we wanted the wood to come from, how long we wanted it seasoned and lastly how it was to be toasted. Every aspect of them, meant to amplify our stylistic goals. We designed both a white and red version with a handful of toasts to add layers of complexity to what we feel is a perfect barrel for us. We called these barrels, Lumen.
Winemaking

Aryn understands the science behind winemaking better than most. However, our philosophy is not to “make” wine but to showcase it’s natural landscape. We embrace minimal intervention in our winemaking by utilizing gentle extraction techniques, such as soft pressing or extended maceration, which allows for the natural development of tannins without excessive manipulation. We implement low levels of sulfur dioxide as a mild preservative, ensuring the wines maintain stability while honoring natural processes. Whenever possible only indigenous yeasts are used which are found naturally on grape skins reducing the need for commercial yeast strains, supporting the unique terroir expression.

Experience plays a pivotal role in winemaking. To be able to seamlessly incorporate the artistic approach and the uniqueness of the vineyards. Treating each wine individually and understanding what best methods to deliver the desired results without compromising the fruit. Knowing the effects of each vessel and process enable us to produce wines that are enjoyable in their early years while still retaining their aging potential.
