The 2019 Cabernet Sauvignon Ultima is nearly impossible to pull away from, boasting a darkly alluring bouquet of black currants and blueberries complemented by sweet sage and cocoa hints. This deeply textural, elegant and sensual, with ripe mineral-tinged black fruits and savory exotic spices swirling throughout. It finishes structured and potent, yet not tiring in any way, instead energized by residual acidity, as nuances of black currant and balsam herbs slowly fade. The Cabernet Sauvignon Ultima, from winemaker Aryn Morell, is matured for 21 months in 80% new 300-liter French oak, which is perfectly integrated here. Drink 2025-2035- Vinous

  • The Wine: 2019 is the inaugural vintage of our Última Cabernet Sauvignon. Última meaning “the last or the final” is the pinnacle of our portfolio while being our most structured and age worthy wine. During blending, Última is selected from the best Cabernet Sauvignon of the vintage and aged exclusively in our proprietary Lumen barrels. A classic Cabernet with floral undertones, lithe tannins and a long cocoa powder dusted finish.

  • The Vintage: The 2019 vintage started out cool with heavy snowpack from February and March that kept ground temps cool and the soils saturated with moisture. Budbreak was slightly later than normal and moisture in the soils made nutrients readily available for the spring and early summer. Big canopy growth and a large fruit set led to a substantial harvest and although there was an early freeze event, much of our production had already been harvested or was at elevations that weren’t affected.
